My favourite Time Team was when they dug at Cheshunt, Hertfordshire, in the Lea Valley (I live about 8 miles from Cheshunt) They found, amongst other things, the remains of a malting floor, where barley is prepared for making beer Malting still takes place in the Lea Valley: it has a smell like scorched coffee or chocolate Amazing to think of an industry that's been going on here for nearly 2000 years!
