Chili powder is usually made of ancho or poblano peppers, rather mild, as are most of the bigger kinds of chiles if you want heat, you add cayenne or serrano or little chilipequines that grow wild (we used to call them that, but I've also heard "bird peppers" since birds apparently don't have a reaction to capsaicin, and love them) I put beans in mine, but also a lot of comino, because comino rocks The beans make it economical, because you can stretch the meat to feed more people, which is probably where the controversy comes from You can feed your family beans, but if company is coming over, you want to give them the nice version, not the "stretched", cheaper version with beans in it You can use corn masa to thicken it, same stuff you make corn tortillas from My dad's family is from San Antonio, and I remember some of the places in the pictures ¡Muchas gracias! Speaking of that dried chili, when I was a kid (I'm 84), one could purchase at the grocer a loaf of chili which looked like a small salamiThis stuff was very dry and VERY firmAll you had to do was cut open the skin of the wrapper bag and break up the contents ( using effort), into a pot of waterIt was much as you described as 'dried chili'It contained meat, chilis, and a very firm red matterWhen boiled in the water it turned into a delicious pot of chili that I miss the taste of until this day Comment from : James McDowell |
