I really like the part where he describes just using basically two knives ( 10in chef knife and 6in utility knife) As a meat cutter with 35 years experience, that's basically what most meat cutters would go with Of course, we don't go with chef's knives, but 10-12in steak knives I guess what I would focus on is getting and learning how to use a 3 sided sharpening stone Sharpening steals are a must in day to day operations but it's truly the stone that brings an edge back to your knife I know reality Yes, I would really, really love to have expensive knives in my collection, but hey I'm a cheapskate I can shave with my Forschners which are 12 years old or older Please start slowly and learn what really keeps knives going Comment from : David Royer |
